Grilled Tofu-Veggie Kabobs


Although grilling is a routine affair when it comes to summer, it  is always about meat eaters.  In the past, people have asked me what on earth a vegetarian cooks on the grill. Rest assured that grilled vegetarian fare goes far beyond veggie burgers, paneer tikkas, and tofu pups! After moving to Grove City, we are blessed to have great neighbors! They were cooking on the grill and had inspired me to make this dish! These grilled tofu-veggies kabobs are simple, delicious, filling and healthy! Paneer tikkas are my favorite, but wanted to try healthier version by substituting tofu. This recipe is easy and is so versatile that it can be applied to meat, paneer/tofu, veggies.


1 pack of extra-firm tofu, drained and pressed, cut into 1 inch cubes

1 green bell pepper cubed

1 medium zucchini cubed

1 medium onion cubed

1 handful of baby white mushrooms cubed

skewers for grilling


1/2 cup  roasted gram flour

1 cup plain yogurt

1 tbsp ginger paste

1 tbsp garlic paste

1 tbsp tandoori masala

1/2 tsp garam masala

1 tbsp lemon juice

1 tbsp chaat masala

1 tsp cumin powder

Salt as per taste


Make the marinade the previous night by placing all the ingredients and mixing them into a smooth consistency. Pour this over the cubed tofu/veggies and let it sit overnight.

When ready to grill, soak the wooden skewers in water for at least half hour (or else they will burn when you put them on grill).  You can use any vegetables you want in this dish. You can choose to only marinade the tofu by it self and toss the veggies into marinade the last minute prior grilling. If they are evenly coated, they should be fine.

Start skewering by alternating onion with pepper, mushrooms and tofu pieces. Grill over medium heat covered, until slightly charred and grill marks appear. My neighbor Jeff let us use his grill and it only took approximately 15 minutes. Keep turning until both sides are cooked. Serve at room temperature with hint of lemon! Enjoy!

P.S. This is a yummy dish that is not only appealing dish but it is also very filling. Thanks to the protein in the tofu and fiber in the veggies. You can use any veggies you want, I have used eggplants, tomatoes, okra in past. You can also choose your choice of marinade.
