Veggie Stuffed Mushrooms

Is there an appetizer that you are always drawn to when you are at parties or gathering? For me, it’s the stuffed mushrooms. I am a mushroom lover, anyway, but stuff them full of anything and them bake or fry them – I just cant resist!

I have seen traditional stuffed baked mushrooms recipe but I wanted to try something different, so I tried different ways of making it. This is my favorite recipe because its easy to make and perfect appetizer for parties.  You can stuff the mushrooms with anything you want. On multiple occasions to change things up, I have stuffed with quinoa, potato-cheese, marinara-mozzarella cheese. When it comes to stuffing, truly sky is the limit.

And trust me – people love their carbs, so I am sure this will be a favorite at your next holiday party. For this dish, you can stuff any veggies you have in the house. Here is how you make them:

Ingredients:

20 mushrooms (wash and then remove the stems)

oil to fry

salt-pepper as per taste

Filling for mushrooms:

1 medium onion (finely chopped)

3 cloves garlic (finely chopped)

1 small zucchini (finely chopped)- optional

1/3 cup broccoli florets (finely chopped)

1/2 bell pepper (finely chopped)

1 tsp oil to saute

1/2 cup mozzarella cheese

Batter to coat mushrooms:

1/2 cup all purpose flour

water as needed

Bread crumbs (plain or italian seasoning)

First of all, wash your mushrooms and tap dry them, take the stems out, so mushroom cavity can be filled. Chop all the veggies as above, you can add more or less as per availability.

In small pan with little oil just to saute the veggies lightly. Add garlic and saute until slightly pink. Add all your veggies and saute. Season with salt and pepper. Turn off the stove and let the filling cool prior adding cheese in it.

In a small bowl take the all purpose flour and add just enough water to make thick batter, add pinch of salt in the batter. Take a large pan and heat oil for frying.

Fill the mushroom cavity with the veggie-cheese stuffing.

Join two mushrooms together with a toothpick. Dip it in the batter and then roll it in the bread crumbs. Deep fry them and serve hot! Enjoy!

P.S. Remember to add less oil as possible when cooking veggies, you want take out all the moisture from the veggies. Add any veggies you have available in the house. You can even stuff zucchini the same way  and make mushroom zucchini platter!
