Breakfast is the most important meal of the day and I spend the least amount of time preparing it. Upma has always been my favorite breakfast/snack. Upma is healthy, yummy and quite filling. I love rava upma but wanted to make it even healthier, so I switched with rolled oats. This is my favorite healthy substitution to rava upma. Rolled oats are more healthier compared to quick cook oats. Rolled oats have a low glycemic index than the quick cook oats. This dish is very easy and can be made within 10-15 minutes. This dish is very delicious and quite filling. I hope you enjoy this dish as much as I do.
1 cup rolled oats
1/3 cup peas
1/3 cup carrots finely chopped (optional)
1/3 cup onions finely chopped
3-4 curry leaves
1-2 red dried chili pepper
1 tsp ginger garlic paste
1 green chili chopped
1 tsp urad dal
1 tsp mustard seeds
1 tsp turmeric powder
2 tsp olive oil
salt to taste
1 cup of water
Heat 1 tsp olive oil in a non-stick pan, add the oats and 1/2 tsp of turmeric powder and sauté on a medium flame for 3-4 minutes or till it turns light brown in color, stirring occasionally. Keep aside.
Heat the remaining 1 tsp of olive oil in a non-stick pan and add the mustard seeds. When the seeds crackle, add the urad dal, curry leaves, red chillies and green chillies and salute on a medium flame for 1-2 minute.
Add the onions and salute on a medium flame for 1-2 minute or till the onions turn translucent. Add the ginger-garlic paste, carrots and peas. Salute on a medium flame for 2-3 minutes.
Add the oats mixture, salt and remaining 1/2 tsp of turmeric powder, mix well and cook on a medium flame for 1 minute stirring continuously.
Add 1 cup of warm water, cover and cook on a slow flame for 5-7 minutes with lid closed, stirring occasionally. Serve immediately. Garnish with coriander (optional).
